I’m on a work trip to Sweden but my loved ones are still home and I prepared a dinner menu for my husband to help him out. So here is this week’s budget friendly plant-based, vegan and healthy weekly menu.

Mac and Cheese served with steamed broccoli

 

 

 

 

 

 

 

Tuesday

White beans in dilly tomato sauce with roasted potatoes and kale salad

 

 

 

 

 

 

 

Wednesday

Dal served with rice, raita and chutney

 

 

 

 

 

 

 

Thursday

Beet soup served with rice

Friday

Dinner at friend’s house

 

 

 

 

 

 

 

Saturday

Black Bean Chili served with corn bread, red cabbage and mashed avocado with lots of cilantro

Leftover day
