We have a busy week ahead of us with lots of fun but time consuming activities so meal planning is the key for us to keep eating healthy and we can do food preps ahead of time. My pierogis are perfect food to bring along for food on the go or a picnic, same goes for the spring rolls and both are easy to make ahead of time. The enchiladas are a recipe based on one from my friend Kristen who makes yummy enchiladas and these can easily be made in a crockpot.
