I have all these yams in my fridge and wanted to make a different kind of potato salad. This is the result, a side dish we ate with our BBQ dinner on Saturday. The combination of sweet, salty and sour is wonderful.
1 large yam, peeled and sliced
2/3 cup hard cheese, diced ( I used rice cheese)
2 tbs red chili pepper, minced
1 tbs olive oil
Juice from 1/2 lemon
1 tsp dried Italian herbs
Salt to taste
Steam yam to al dente. Heat 1/2 tbs oil in a frying pan on medium heat. Saute chili peppers for 1 minutes. Add yam and fry for a few minutes. Mix remaining oil, lemon juice, herbs and salt and pour over yam and chili. Sprinkle cheese over and serve warm.
