Warm sweet potato salad

I had sweet potatoes left from Bella’s party so I made a warm potato salad which we enjoyed with marinated beans.
3 medium sweet potatoes, cooked
2/3 cup feta cheese, crumbled (Soy or dairy)
1 1/2 cup arugula
1/2 cup tomatoes, chopped
1/2 cup sweet corn, cooked
Place the warm sweet potato slices on top of a bed of arugula. Place tomatoes, corn, tomatoes and cheese over. Drizzle dressing over and eat right a way.
Dressing:
4 tbs olive oil
1 tbs white balsamic vinegar
1 1/2 tbs dijon mustard
2 tbs water
2 tsp dried parsley
Salt & pepper to taste
Mix together.

Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business.
