Walnut Bread

My friend Alexandra and her 7 week old baby Max are visiting from San Mateo this week. It’s fun to have an adult to talk to while feeding and rocking Noah to sleep. I made a special dinner for her and since I know how much she loves bread and bake a walnut bread to serve with dinner. It’s a perfect bread with crusty outside and fluffy soft inside.

5 cups spelt flour
3 cups all-purpose white flour (maybe more and save some for kneeling with)
1/2 cup walnuts, chopped
1 cup oats
1/4 cup flax seeds
1 package active yeast
3 tsp salt
2 tbs honey
1 1/2 cup warm water
1 1/2 cup plain yogurt ( I used coconut yogurt)

Mix all dry ingredients with the yeast in a large bowl. Blend the warm water with honey and yogurt and mix in with flour mix a little at the time until you have a nice dough. Sprinkle a little flour over dough and leave it to rise under a towel for 1 hour. Place dough in a surface sprinkle with flour and knead the dough for a few minutes. Divide dough into two pieces. Shape into a loaf and place in well oiled loaf pans. Leave to rise for 20 minutes. Preheat oven to F415. Brush each loaf with water. Bake for 20-30 minute or until loafs are golden and center is dry.
