I always find that days when I’m most busy and/or kids are a handful are the days I don’t eat well. My body needs fast energy so I reach for a sugary snack. Not good at all because that’s the beginning of the downward spiral of bad eating for a day. Yesterday was one of those where I had not slept well the night before (jetlage still) Noah is teething and not happy so he screams (oh boy how loud he can be) Bella was hyper and said no to everything so I ended up playing every game imaginable. All this while I try to clean, cook breakfast, lunch and dinner and trying to work at the same time.
At 9 am was getting hungry and tired so instead this time I took a few minutes ( 5) to make a proper snack that would last me a while for all princess games I had to participate in. It’s such simple whole grain bread with avocado and veggies yet so tasty. This snack does not mess with my blood sugar so I do not crave sugar or have sugar crash later. It also makes my temper more even to help me stay calm during the endless “look at me mommy, can you, can I, NOOOOO, waaahaaaa etc”. Well you get the picture right?
Mix salsa and avocado and spread on bread. Arrange bell pepper and sprouts on top.
