Sweet & sour curry broccoli

In this pregnancy I’ve been craving international food and today it was Indian cuisine. I really wanted Indian spiced beets but it turned out my beets had gone bad so instead I made this broccoli dish which ended up very nice. With this we ate pan fried tofu dipped in a mix of flour, salt and turmeric as well as lemon & dill rice.

Sweet & sour curry broccoli
4 cups broccoli crowns
1 1/2 tbs canola oil
1/2 tsp coriander powder
1 tsp ginger powder
1/2 tsp cumin seeds
1 cup pineapple juice
1 tsp tamarind paste
2 tsp red curry paste
1 tbs brown sugar
1 tbs corn starch mixed with 1 tbs water
1/4 cup slivered and blanched almonds
Heat oil on medium heat in a pot and add spices and let them sizzle for 1 minute. Add pineapple juice, tamarind paste, red curry and sugar and blend well. Add broccoli, place a lit on and reduce heat to low and simmer until broccoli are soft. Add corn starch mix and blend well with sauce. Sprinkle almonds over and serve with rice etc.

Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business.
