Sweet potato quesadilla

I found a recipe for these in a cook book I picked up while in Sweden it’s called “en bulle i ugnen” (a bun in the oven). I loved the book and couldn’t wait until I came home and could try these quesadilla’s. I made some changes off course ; I added carrots,  vegan rice cheese and used whole wheat tortillas. The outcome was very nice and works well as a whole meal or as a snack for a hungry toddler.

Quesadillas, makes two
4 whole wheat tortilla’s
1 medium sweet potatoes, peeled and diced
1 large carrot, peeled and diced
1/2 cup red lentils, rinsed. 
1 cup grated cheese of your choice. 
salt & pepper
Place lentils and vegetables in a pot a bring to a boil on high heat. Lower heat to low and let simmer for about 10 minutes or until vegetables and lentil are cooked. Place in blender with salt and pepper and puree or just mash really well with a fork.  Spread lentil mix on 2 of the tortillas and sprinkle cheese on top. Place remaining tortilla’s on top and grill them either on BBQ, in oven or on stove in a frying pan until cheese is melted.
