Sundried tomato pasta sauce

This weekend has been crazy busy, busy with a lot of things to do and people to see. Bella had a play date both yesterday and today. I’ve been busy boiling beans; pinto, black, kidney and garbanzo beans to be exact and now they are frozen in small glass jars. I also baked bread for the week and worked in the garden phew. I’m getting ready to plant potatoes and tomatoes. Dinner ended up being this sun dried tomato sauce served with pasta and side salad.
1/2 cup sun dried tomatoes, soaked in 1 cup warm water for one hour and then chopped
1 large garlic clove, grated
1 tbs Olive oil
1/2 cup milk ( I used almond)
1/2 cup sour cream ( I used Tofutti)
1/2 cup fresh basil leafs, chopped
Salt & pepper to taste
Heat oil in a skillet on medium heat. Saute garlic for 1 minute. Add sun dried tomatoes and saute for another minute. Add milk and cream and simmer for 5 minutes on low heat. Add salt, pepper and basil and serve immediately.
