Sun dried tomato and red pepper pizza sauce

Bella wished for pizza for yesterday’s dinner and I was excited to make it for her. However I had almost no tomato to make sauce from so I had compromise and made sauce from sun dried tomatoes and red pepper I had instead. It worked beautifully and Bella was super happy. Because of that one ½ red pepper I had dried with the tomatoes, the sauce had a slight sting to it but luckily the kids did not object. The dried pepper can be substituted with a fresh pepper instead off course.

 

 

 

 

 

20 sun dried tomatoes, soaked in hot water for 20 minutes

½ dried hot red pepper or ¼ fresh red pepper, seeds removed and minced

¼ cup red onion chopped

1 garlic clove, chopped

¼ cup fresh herbs chopped, I used parsley, marjoram, basil and chive

2 tbsp. olive oil

1 tbsp. agave

1 tbsp. tomato ketchup

1 cup water

Salt and pepper to taste

Combine in a saucepan sun dried tomatoes, red pepper, water, red onion, garlic, fresh herbs, olive oil and sugar or honey. Bring to a boil and cook on medium heat for 10 minutes. Add more water if seems dry. Remove from heat and add ketchup, salt and pepper. Puree in blender or food processor.
