This dish came out very pink and purple which was quit funnybecause it matched Bella’s outfit for the day and what better way to get yourkids to eat vegetables than if they match themJOtherwise, kids usually like this dish because it has a slight sweetness fromthe balsamic vinegar. I served this dish with quinoa but it will taste greatwith rice or noodles too.
Stir-fry cabbage and kale in a creamy balsamic sauce
¼ cup green onion,diced
1 cup purple cabbage,chopped
1 cups kale, stemsremoved and chopped
1 tbsp. canola oil
¼ cup hot water
2 tbsp. balsamicvinegar
Salt & pepper totaste
2 tbsp. sour cream (I used Tofutti sour cream)
Heat oil in a wok on medium heat and cook onions, cabbageand kale for 5 minutes, stirring often. Add balsamic vinegar and hot water andcook for another 5-10 minutes until cabbage is al dente. Remove from heat anddrop sour cream, sat and pepper in and blend.
