This is one of the first dishes I ever cooked at age 8 and now it’s one of my kid’s favorite foods which is great because I grow lots of spinach in my garden. It’s fast and easy to make and tossed with pasta, a few beans and it’s a healthy and satisfying meal.
- 200g chopped fresh or frozen spinach
- 1 tbsp. olive oil
- 1 tbsp. all-purpose flour
- 1 cup almond milk
- salt & pepper to taste
- A pinch of nutmeg
Heat oil in pot on medium heat and cook spinach until wilted. Sprinkle flour and stir and add a little milk at the time while whisking to remove lumps. Once all milk is incorporated add salt, pepper and nutmeg and bring to simmer while stirring. Remove from heat. If you want a smoother sauce you can blend the sauce for just a few seconds. Toss with pasta and enjoy.
