Sesame & Sunflower Seed Crackers

I love making my own crackers because they are healthier, pretty easy to make and cheaper. These taste so good as a snack, with a cup of tea, or a smoothie.

  • 2 cups spelt flour; save some for the kneadingoat crackers
  • 1/2 cup all-purpose white flour
  • 3/4 cup sunflower seeds
  • 1/4 cup sesame seeds
  • 1 tsp salt
  • 150g butter, room temperatured
  • 2 tsp baking powder
  • 1 Tbs honey
  • 1/2 cup water

Place sunflower seeds into a food processor and process until coarse. Add remaining dry ingredients and mix just for a second. Add the wet ingredients and process until it’s a sticky dough. Dust a baking area with some flour and kneed the dough, then roll it into a log. Place it on plastic wrap and roll it up, twisting plastic ends. Place in freezer for one hour. Preheat oven to 450F. Remove the dough log from freezer and plastic wrap, and slice it thinly. Place on cookie sheet and bake for about 3-5 minutes. Remove from oven and flip each cracker once before baking another 3-5 minutes, depending on thickness of cracker. They should be golden, not dark brown.
