Russian beet soup

I got a lot of beets growing in my garden from all the rain and I had a lot of cabbage from the two latest organic deliveries so I use them to made this rich beet soup. My daughter loves it because it’s pretty pink, I love it because it’s busting with sweet and sour flavors as well as nutrition. Serve the soup with a dollop of sour cream and some toasted pumpkin seeds.
Russian beet soup
2 small beets, peeled and grated
1 medium carrot, peeled and grated
1/2 cup cabbage, diced
1/2 swiss chard, chopped
2 cup water
1/2 bullion cube
2 tbs balsamic vinegar
salt & pepper to taste
Place everything except swiss chard and vinegar in a large pot and bring simmer on low heat for 10-15 minutes or until vegetables are soft. Add swiss chard and simmer for another minutes. Add vinegar.

Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
