Roasted tomato soup with pasta

Ever since our dinner at La Costa spa I’ve been dreaming about tomato soup so when I made dinner I changed my mind from making pasta to making a roasted tomato soup but since I had promised pasta I just added that to the soup. It all worked really well.

 

 

1 tbsp. olive oil
¼ cup red onion, minced
1 large garlic clove, grated
½ cup carrots, grated
1 can diced roasted tomato
1 ½ cups water
1 tbsp. tomato puree
1 tsp. chili pepper
Salt & pepper to taste
½ cup chive and garlic flavored cream cheese
1 cup cooked whole wheat or quinoa pasta
Heat oil in a large saucepan on medium heat and sauté red onion and garlic for five minutes. Add carrots and cook for a few minutes more. Add tomatoes, water, tomato puree, chili pepper, salt and pepper. Bring to a boil covered for 20 minutes.  Remove from burner and let cream cheese melt in the soup. Stir and add pasta right before serving.
