Quinoa breakfast porridge

Wow I’m one relaxed mama tonight after spending the afternoon at a spa with my friend Andrea. Usually I get a massage from her every Sunday but this week  we wanted to do something special to celebrate her birthday.

For breakfast we  eat blueberry oatmeal almost every morning. This morning we ran out of oats so  I made porridge from quinoa instead. I also want to post this recipe for my father in-law who is interested in adding quinoa to his daily diet. Quinoa being a super food because of its loads of so much fiber, protein and vitamins, is also a fairly fast cooking grain so it’s perfect as a breakfast food. I served the porridge topped with diced fruit which in my case was an orange.

1/2 cup quinoa, rinsed
1 cup milk ( I used almond milk)
1/2 vanilla bean, split open and seeds scraped into the porridge
1 pinch of cinnamon
1 pinch of cardamon
2 dried apricots, diced
1 tbs maple syrup
1 tbs virgin coconut oil


Combine everything except the coconut oil and bring to a boil. Reduce to a simmer and cook until tender, about 15 minutes. Stir in the coconut oil and discard the vanilla bean. Serve with fruit and/or with milk.
