Quinoa and strawberry Tabouleh

My mint and basil in the garden has been growing really well so I wanted to in cooperate that in a dish and I choose to make Tabouleh which is an Arab dish traditionally made with bulgur and tons of herbs. I choose to make it with quinoa and used strawberries instead of tomato and the result was very good. You can serve this on the side of grilled tofu, seitan or tempeh.

 

2 cups cooked quinoa,
1 cucumber, peeled, seeded and finely diced
10 mint leaves, finely minced
5 basil leaves, finely minced
¼ cup parsley, minced
4cup red onion, diced
1 cup greens such as kale, beet greens or spinach, chopped fine
1 cup strawberries, sliced
Dressing:
Juice from one lemon
1/8 cup extra virgin olive oil
1 tsp. dried oregano
Salt & pepper to taste
First combine everything for dressing in a small bowl. Toss this and the quinoa with cucumber, mint, parsley, basil, parsley, red onion, greens and strawberries. Enjoy!
