I’m drowning in tomatoes, which is not a bad thing since I love them. I needed to preserve them before they spoiled, so that was a mission today. Here is a super easy recipe from Martha Stewart that I used. I also learned from a co-worker at Green-Mom.Com that you can also preserve tomatoes by simply placing your super ripe tomatoes individually in the freezer and once they are hard, put them in a freezer bag or container. They will make a great sauce later in the year. All you have to do is place a thawed tomato or two in a blender.
