Pineapple Fried Quinoa

James and Bella came home with a pineapple they bought at Whole Foods and I was trying to come up with a way to cook with it. I also had leftover quinoa and in the past when I had leftover rice I would always make fried rice so now my idea was to make fried quinoa instead. I love the combination of salty and sweet so I figured I could add the pineapple to the fried quinoa. It was a super hit with Bella who loves pineapple but not quinoa as much.

1 tbsp. olive oil
1 cup shiitake mushrooms, sliced
¼ cup shallots, minced
1 tsp. red jalapeno pepper (optional)
1 cup pineapple, diced
2 cups cooked quinoa
1 cup kale, chopped
1 tbsp. Bragg’s liquid amino’s or tamari
Salt and black pepper to taste
Heat oil in a large frying pan on medium heat and sauté shallots, jalapeno pepper if using and shiitake mushrooms until slightly browned. Add pineapple and kale and cook for 5 minutes, stirring often. Add quinoa, bragg’s, salt and pepper and cook on high heat for 5 minutes.

Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business.
