Pineapple filled sandwich cookies

Happy Earth Day Everyone! I hope all are taking this opportunity to do something to celebrate our beautiful planet. On Green Mom you can read what we and our staff are doing to celebrate.

We had a date with our neighbors for Mexican traditional enchilada making. Kristen makes the best enchiladas so I finally got her to teach me. They were amazing and soon as I get the OK from Kristen I will post the recipe here. As a thank you and for a sweet ending I baked pineapple sandwich cookies. The pineapple fried quinoa I made yesterday inspired me to make these cookies. 
½ cup almond meal
1 ½ cup white spelt flour or all-purpose flour
½ cup sugar
½ tsp. baking soda
110g butter
Pineapples preserve
Combine almond meal, flour, sugar, baking soda and butter in a food processor and mix until it’s a firm dough ball. Wrap in plastic and place in fridge for 20 minutes. Preheat oven to F400.  Roll dough into just larger than a quarter size ball and place on a cookie sheet. Use back of a fork to press balls slightly flat. Bake for 7-10 minutes, until golden brown. Let cookies cool completely. Spread pineapple preserve on flat side and pair up two cookies to make a sandwich.

Years of food blogging developed into the cookbook Yummy in My Tummy, Healthy Cooking for the Whole Family. Upon the arrival of her second child, Fredrica founded Green-Mom.com. Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
