Pea puree

When I cleaned the freezer yesterday I found a half a bag of whole wheat soy ricotta cheese raviolis that I decided to use for dinner. I wanted to serve it with something colorful and tasty for the kids so I made a pea puree and it was a hit with both kids. I have to admit peas are the only vegetable I’m not too keen on but for some reason it’s ok pureed so I happily ate it too.

Peas are a great food due to its high levels of protein, vitamin C and K as well as vitamin B6 and folate acid. It’s a great “first” for babies and most kids will eat peas because they are slightly sweet. This puree is perfect if you dealing with someone like me who just don’t like the texture of peas.
2 cups cooked fresh or frozen green peas
1 tbsp. olive oil
1 cup almond milk
Salt & pepper to taste
Puree everything in a blender or food processor until lump free and smooth texture instead. Serve with ravioli on top of as a side dish with roasted vegetable, pan-fried seitan etc.
