Oat bread rolls and Green Mom

Finally my business web site Green mom is up and running so please check it out and read some very inspiring articles on green living and families by some very special writers. My food blog will eventually move over there as well but for now it’s just linked.

Yesterday night I realized we had no bread fro Bella’s lunch so I had two options; 1. go to the store and buy bread or 2. bake it myself and I was super tired last night. Well since driving to the store would take as much time as preparing a dough I went with #2. I prepared the dough and let it rise all night. This morning when I woke up and preheated the oven and kneaded the dough and made it into rolls while the oven was heating. It was perfect and the bread was done by the time everyone was up, diapers changed and everyone dressed.

1/2  tbsp active dry yeast
1 1/2 tbsp honey
1 1/4 cup warm water
1 tsp salt
1 1/2 tbs olive oil
1/2 cup rolled oats
4 dried apricots, minced
1 cup whole wheat spelt flour
2 cups white spelt flour

Mix whole wheat, white spelt flour, dried apricots, salt, oats and yeast in a large bowl or kitchen aid. Blend warm water, oil, and honey in small bowl and add slowly to flour mix and combine and work dough for at least 5 minutes, until it’s elastic and not too sticky (it should let go of the bowl pretty easy). You might have to add more flour. Cover bowl with a towel and set to rise a couple of hours or over night. The dough should double in size. Preheat oven to F350. Knead dough in a surface sprinkled with flour. Divide into rolls and place on a baking sheet. Bake for 20-25 minutes, until buns are golden and center is dry.

Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families.
