Nut and oatmeal cookies

Yesterday I had one of those days when a lot of things went wrong and lots of stress. So what do I do to relax? I bake or cook. I know it sounds weird but it’s when I know I can control things and keeps my hands and head busy and it’s not about eating either. Hubby off course was thrilled about the goodie surprise that was waiting for him when he go home from work. 

200g butter
1 cup sugar
2 tbs cocoa powder
1 cup chopped salted and roasted cashews
1 cup oats
1 tsp baking powder
1 vanilla bean seeds 
3 cups white spelt flour or all-purpose flour


1/2 cup dark chocolate chips

Preheat oven to F350
Combine butter and sugar in a bowl and whip until fluffy and white. Stir in remaining ingredients except the chocolate chips and blend well. Roll little balls and place in a parchment paper on a cookie sheet. Bake for 25-30 minutes. Let cookies cool on a wire rack. Melt chocolate and drizzle over cold cookies.

Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
