As I said in a previous post my mint is growing all over the garden, which makes me happy because I love mint for tea, cooking and smoothies. So when our neighbor brought over some beautiful organic oranges I knew exactly what I was going to use them for; an orange and mint smoothie. It was the perfect afternoon pick-me-up before Bella came home and Noah woke up from his nap.
Minty Orange Smoothie
12 ounces coconut water
3 mint leafs
1 ripe orange, peeled and diced (remove all white parts too)
1 large green leaf, chopped (I used swiss chard)
¼ ripe avocado
1 date, pitted
Place everything in a blender and process for 1-2 minutes until completely lump free and very creamy. Bottoms up!
