Meatless Monday — Ginger Carrot Soup

Soup is the perfect food for the soul  when you’re sick.  I have a million soup recipes, and we eat soup at least twice a week. This past week, my baby boy Liam has been sick with a very bad cold and, therefore, has been a little cranky and in need of being held by Mom a lot. For me this has meant little to no sleep and very little time for anything else. Since many soups can be made on the fly with few ingredients, it was a life safer for me because I actually could eat lunch each day. This is my favorite “good for the soul soup” recipe; the color can make anyone happy!

Ginger is not only a wonderful spicy but it also comes with many health benefits. It’s widely known for helping to easy nausea due to example morning sickness and stomach upset. Some even claims it works on symptoms of upper respiratory tract infection, cough, menstrual cramps, and muscle pain.

 Ginger-Carrot-Soup

  •  ½ Tbsp. grated fresh ginger
  • 2 large carrots, peeled and chopped
  • ½ cup sun chokes or potato, peeled and chopped
  • 1 ½ cup vegetable stock
  • Salt and pepper to taste

Place everything except salt and pepper into a soup pot and bring to a boil. Reduce to a simmer, cover and cook for 15 minutes. Blend soup until very smooth and return to pot. Add salt and pepper before serving.
