Mango chickpea curry

Bella loves dried mango and is the only thing she ever ask for when we go grocery shopping. Noah loves anything with mango but almost never buy it because it has travelled so far and cost so much. But then I thought of how you eat mango chutney with indian food and the idea of a curry with dried mango was born. I admit we eat a lot of curry at home but it’s so easy to make, such easy way to serve tons of vegetables plus everyone loves it. It’s a win win for me.

In this curry I added a lot of root vegeteblas such as carrots and parsnip since it’s this seasons vegetables. I also added broccolini for some greens. When you make stews or casseroles and cook many vegetables at the same time it’s important they are they same size so they will cook even. I don’t know if you really could taste the mango but they all loved it.

1 tbs canola or coconut oil
1/4 cup leeks, minced
1/2 tbs yellow curry spice or more if you want a stronger curry flavor like me do
2 cup mixed root vegetables, peeled and chopped ( I used carrots and parsnips)
1 cup broccoli or broccolini, chopped
1 cup water
2/3 cup light coconut milk
1 cup cooked chickpeas
Salt & pepper to taste

Heat oil in a large saucepan on medium heat and saute leeks with curry spice. Add the root vegetables and cook for another minutes. Add water and bring to a boil for 5 minutes. Add broccoli and cook for another 2 minutes. Add coconut milk, chickpeas, salt & pepper and reduce to a simmer for 10 minutes. Enjoy with naan bread and rice.
