Lentil soup

Days go by so fast these day and on top of this is so dark all the time. I can’t believe it’s Thanksgiving next week already. When you’re out and about your can feel people’s holiday stress building so I try to stay away from stores and malls as much as possible.

I made a flavorful lentil soup for dinner last night to help make the day a little more colorful. I like lentil soup because they are so easy to make and easy to make nutritional. My daughter is not a big fan of tomatoes but she like this soup and calls it tomato soup. Hey whatever works:) I added cayenne pepper to make the soup a little but spicy for us adult but I added it after I served the kids.

1 tbs canola oil
1/2 yellow onion
1 large garlic cloves, grated
2 tsp garam masala spice
Cayenne pepper to taste (optional)
1/4 cup red lentils
1 cup hot water
1 can diced tomatoes
1 cup kale, chopped
Bragg’s or tamari to taste

Heat oil in a large sauce pan and cook onions and garlic on medium heat. Add garam masala, lentils, hot water and diced tomatoes. Reduce to a simmer and cook for 10 minutes. Stir in the  kale and return to cook for another 5 minutes. Add bragg’s or tamari as well as cayenne pepper if so choses.
