Late night dinner for one

On Tuesday night after I had cleaned up the kitchen and was ready to head to bed I got a text from my late working husband asking if there were any dinner leftover for him. Unfortunately I didn’t expect James to eat at home so there was no food left for him. I felt bad for him and went to work to cook a dinner that would be satisfying, nutritional and very quick since it was so late.

1 tsp coconut oil
1/2 cup zucchini, sliced thin

½ cup kale, chopped
½ cup cooked kidney beans
Salt to taste
1 cup cooked rice
Sweet and spicy chili sauce
Heat oil in a wok on medium heat and sauté zucchini for 2 minutes. Add kale and cook until wilted. Add salt according to taste. Add kidney beans and let them get hot. Pour the veggie and beans over the cooked rice and drizzle the chili sauce over.

After her first-born, Fredrica began a food blog focusing on local, seasonal, organic & vegetarian dishes. Years of food blogging developed into the cookbook Yummy in My Tummy, Healthy Cooking for the Whole Family. Upon the arrival of her second child, Fredrica founded Green-Mom.com. Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
