Indian Vegetable Stew

Suddenly it got cold and grey outside so we all got chilly and felt like something warming for dinner. Nothing taste warm like a nice creamy Indian stew with tons of vegetables and lemon rice. The vegetables can be varied as sees fit and what you have available.

1/2 tbsp. canola oil
¼ cup shallots, minced
½ tbsp. brown mustard seeds
½ cup rutabaga, peeled and diced
½ cup small broccoli florets
1/2 cup purple cabbage, diced
1 small tomato, diced
1 tsp. ground garam masala
Salt to taste
½ cup water
½ cup coconut milk
Heat oil in a saucepan on medium heat and sauté shallots for 2-3 minutes. Add mustard seeds and let them start popping. Add rutabaga, cabbage, broccoli, tomato, salt, garam masala, water and coconut milk. Bring to a boil and then reduce to a simmer for 10 minutes or until vegetables are soft.

After her first-born, Fredrica began a food blog focusing on local, seasonal, organic & vegetarian dishes. Years of food blogging developed into the cookbook Yummy in My Tummy, Healthy Cooking for the Whole Family. Upon the arrival of her second child, Fredrica founded Green-Mom.com. Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
