Homemade Nut Cheese

I finally gave it a try to make my own hard vegan cheese and I have to say I’m pleasantly surprised how well it turned out and how easy it was. The cheese is hard so it can be sliced or grated and melts in the oven. Next time I’m going to try and make a pepper jack or garlic cheese.

Dry ingredients:
1 1/2 cup raw cashews 
2/3 cup nutritional yeast
1 1/2 tsp salt
1/4 tsp turmeric
1/4 tsp garlic salt
1/2 tsp ground paprika

Wet ingredients:
4 1/4 cups water
1/2 cup grated carrots
3 tbs agar-agar powder
3 tbs lemon juice

Blend all dry ingredients in a food processor until it’s a fine meal. Combine water and carrots in a saucepan and bring to a boil. Reduce to a simmer for 10 minutes. Bring to a boil again and add agar-agar and disk until dissolved. Reduce to a simmer for 10 minutes. Add agar-agar-water-carrot mix to food processor as well as lemon juice and blend until smooth and creamy. Scrape down sides a couple of times. Pour into a bowl or jar and let cool off for 2 hours before removing cheese and placing on a plate.

Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business.
