Homemade herb salt

I get a lot of questions about what kind of herb salt I use in my cooking. I’m using one kind I bought in Sweden. However, I’ve been running out, so I made my own and it taste as good, if not better than the store bought. Probably because all herbs came from my own garden.

Since I live in sunny California I simple place the herb salt in the sun to dry until completely dry which took 2 days. You can also dry it in a dehydrator or oven.

2 cups fine sea salt
1 apple, cored, peeled and chopped
1 celery stalk, chopped
4 cups chopped mixed fresh herbs, I used chives, basil, thyme, sage and parsley
3 garlic cloves, chopped
Place everything in a food processor and blend until you have a wet mess. Spread out thin on a parchment paper and either dry in oven on low heat, dehydrator or in the sun. Stir it a couple of times to get it evenly dried.
