Fruity Bulgur Salad

Jeeez what a hot day we’re having here in San Diego. It’s like middle of summer not January winter. It’s quit a contrast from Sweden and I don’t like it because it feels all wrong and I can’t Noah out middle of the day when it’s like this. I was not in the mood for warm food on a day like this so a bulgur salad was the answer.

1 cup bulgur

2 cups vegetable stock 
1 orange, peeled and diced
1 cup arugula, torn
1/4 cup red onion, minced
1 cup cucumber, peeled and diced
1/2 cup walnuts, chopped
2 tbs flax seed oil
1 tbs honey
2 tbs lemon juice
1/2 tbs dijon mustard
Salt & pepper to taste
Roast bulgur in a frying pan for a few minutes, stirring or shaking the pan often. Bring stock to a boil in a saucepan and then add bulgur.  Cook on low heat for 10 minutes covered with lid. Fluff bulgur with a fork. Combine flax seed oil, honey, lemon juice, mustard, salt and pepper in a small bowl. In large salad bowl, combine orange, arugula, red onion and cucumber and toss with bulgur. Sprinkle walnuts over salad before serving.

Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business.
