French green lentil salad

The plan today was to go out hiking in the morning with my friend Jess and Lola which is a dog we’re dog sitting for a few days. Through out the hike we got rained on so we arrived home very wet.

When I’m thinking cold and rainy weather I think lentils and todays lentils I used were French green lentils which is my favorite lentils to cook with. I love the flavor but not the fact it takes longer to cook than say red lentils.But today I made an exception and used puy and made a really nice lentil salad with tons of flavor and vegetables. This salad is a great addition to a meal with roasted vegetables which for us was roasted yam, zucchini and eggplant.
1 cup French green lentils
2 cups water

1/2 cup corn, steamed
1 cup broccoli florets, steamed
1/2 cup swiss chard, chopped
1/2 cup tomato, chopped
Cook lentils and water for 25-40 minutes or until soft. Discard any water and blend vegetables and lentils in a large bowl. 
Dressing:
1 tbs olive oil
1 tbs lemon juice
1 tsp agave nectar
1 tsp garlic salt 
Black pepper to taste
Mix everything and toss with salad.
