Fennel is one of those vegetables that either you love them or hate them. I love them raw and cooked and yesterday I made a very simple orange and fennel salad that is super fresh and light. It’s not a main meal but works well as a side dish.
Fennel & orange salad
1 medium fennel bulb, sliced very thin
3 oranges, peeled and sliced
2 tsp. salt
1 tbsp. olive oil
Black pepper to taste
Sprinkle salt over the orange slices and set a side for 10 minutes the salt to draw out the juice. Blend fennel and orange slices on a plate and drizzle oil over. Sprinkle black pepper over.
