Creamy kale soup

I’ve one sick little girl at home who woke up with high fever or F 103.3, stomach ache and then vomiting. She has been very cuddly and mellow and needs her mom a lot. I had to pack up both kids and go to the pediatrician after naps and it’s determined it’s a virus so hopefully she will get better soon.

We came home and I had a hungry Noah on my hands so I had to resort to super fast kale soup. Thankfully Noah loves pretty much everything that is food so I served it with a sliced of home baked sour dough bread.

1 tbs canola oil
1 garlic clove, grated
1 cups kale, stems removed and leaves chopped
1 tbs white spelt flour or all-purpose flour
1 cup almond milk
1/2 cup sour cream
Salt & pepper to taste

Heat oil in a saucepan on low heat and cook garlic. Add kale and sauté until wilted. Sprinkle flour over and blend and pour milk in. Whisk to remove any lumps and bring to boil. Reduce to a simmer for a few minutes. Remove from heat and whisk in sour cream, salt and pepper.

Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
