creamy carrot and bean soup

So today was the first day of Bella’s week off from school and it started out so well with baby brother sleeping in and then a nice family morning walk. For lunch I made soup because it’s fast and a very easy way to get kids to eat vegetables.

Later this week on Thursday we’re going to San Francisco so see friends, go shopping and eating fabulous food.

2 tsp canola oil
1/4 cup yellow onion, minced
2 cups water
1 cup shredded carrots
1/2 cup shredded celeriac
1 tsp grated ginger
1/2 vegetable bouillon cube
2/3 cups cooked or canned garbanzo beans
1 tsp agave nectar or honey
1/4 tsp sour cream

Heat oil on medium heat in a saucepan. Saute onion and ginger for a few minutes. Add carrots, celeriac, water and bouillon cube and bring to a boil. Cook for 5 minutes. Combine with beans, agave nectar and sour cream in a blender and mix until creamy.

She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business.
