This is my new favorite way to add flavor to my cooking. Compound butter is butter blended with herbs such as thyme, parsley and garlic. You add a dollop of butter to a dish to add some nice and fun flavors. I make up larger quantities and make a roll which I place in the freezer and this way I always have some handy. I love using it for any vegetables or beans. Sometimes I just place a small amount on top of vegetables and sometimes I actually cook with it by melting in a frying whatever I am in it.
1 cup earth balance margarine
3 garlic cloves
1/4 cup chopped curly parsley
1/4 cup thyme
Place the herbs and garlic in a food processor and blend until it’s a past. Add the butter and blend fast just so it’s all blended. Place the butter on a cling wrap and make a roll out of it. Wrap up well and place in a fridge or freezer to become solid.
