Cinnamon raisin bread buns

This is perfect breakfast or snack bread. I’m not crazy for raisins in baked goods but for some reason in cinnamon raisin bread I find it o.k. When my husband came home after I baked he had a smile on his face because it smelled the aroma of fresh baked cinnamon bread.

1 tbsp. active dry yeast
2 cups white spelt flour
2 tsp. sea salt
2/3 cup raisins
2 tsp. ground cinnamon

2 cups warm water
3 tbsp. maple syrup
3 tbsp. melted butter

Combine, yeast, white spelt flour, salt, raisins and cinnamon in a large bowl. Blend water, maple syrup and melted butter in a small bowl and add that to the flour mix slowly to combine well. Knead for about 5 minutes until you have elastic and not too sticky dough. Cover bowl with a towel and set to rise for 2 hours.
Remove dough from bowl and knead it for about five minutes. Divide dough into smaller pieces. Roll each piece and place on a cookie sheet. Cover rolls with a towel and rise for another 30 minutes. Preheat oven to F400. Bake buns for 10-15 minutes depends on size of rolls. The rolls should golden brown and center dry. Let the rolls cool of on a wire rack before serving.
