Looooong day and I don’t really know why but it felt like forever. I got almost no work done either so now I’m paying for it and have to work now after the kids are a sleep. I made ice cream for dessert and it’s so yummy. I made apple ice cream and for a little extra I made a salted caramel sauce. The combination of the these two are amazing. Like eating a apple pie a’la mode, drizzle with caramel. For the caramel I used this recipe but used coconut milk instead of cream and earth balance butter instead of regular butter.
2 cans coconut cream
1 vanilla bean, scraped
1 1/2 cup apple, peeled, cored and diced
1 tbs canola oil
1 tsp cinnamon
1 tbs brown sugar
Whip the cream and vanilla until fluffy. Place in a ice cream machine for 30 minutes or until almost all solid ice cream. Heat oil in a frying pan on medium heat and fry the apples for 5 minutes. Add cinnamon and sugar and cook for another minutes. Cool down. Add apples right before the ice cream in completely solid.
