Chocolate chia pudding

I’m hooked on chia puddings for breakfast, heck any time of the day is a good chia time concerning me. I find myself in the morning these days not having time to eat breakfast or forgetting really. I usually wake up an hour before the kids to work and to feed our furry friends, make Bella’s lunch and Noah’s oatmeal. Once the family is up I’m busy getting everyone dressed, feed, and off to work ad school and I also have to clean up kicthen and dishes. In between all of this I also sneak out for either a 20-30 minute walk or bike ride to start of the day right. Usually when Bella and James are gone me and Noah take a shorter walk. By the time he goes down for a nap around 8.30 am I’m starved so a chia pudding is perfect.

I like to prepare my puddings the night before so I have one waiting for me in the fridge. The combination of chia, fruit, almond milk and hemp seeds will keep me full and energgized for all the playing me a Noah do once he wakes up. I love having a 1 year old but boy it’s intense and lots of playing all the time.

1 cup almond milk

2 tbs chia seeds
1 date, pitted
1/2 banana
1 tbs cocoa powder
1/2 cup raspberries
1 tbs hemp seeds

Place everything except raspberries and hemps seeds in a blender or food processor. Mix for a few minutes to break up teh chia seeds and to combine eerything. Pour into serving bowl and place in fridge for at least one hour to stiffen up. Serve topped with berries and sprinkled hemp seeds.
