I went on a 7 mil bike ride this morning and then running around like a manic rest of the day which by the way began at 5 am when both kids woke us up. So in the afternoon when Noah was napping and put Bella to rest in her room meaning listening to music and reading books while I whipped up yummy cookies to have with afternoon tea. These are super fast and easy so enjoy, just what I needed to survive the remaining of the day.
100g butter, soft
1/2 cup sugar
2 tbs maple syrup
2 1/2 tbs unsweetened cocoa powder
1 cup while spelt flour
1/4 cup chia seeds
1 vanilla bean, split open and seeds used
1/2 tsp baking soda
1//4 cup chopped hazelnuts
Preheat oven t F350. Whip butter, sugar and maple syrup until white and fluffy. Add cocoa powder flour and blend well. Add chia seeds, vanilla seeds, baking soda and mix. Use wet hands to roll small balls and place on parchment paper. sprinkle chopped nuts over and lightly press nuts in on top. Bake for 15-20 minutes. They will be a little soft in the middle but will stiffen as they cool.
