Chia Breakfast Pudding

My friend and raw food chef Centehua made a divine raw breakfast with chia seeds last week. Noah and I fell in love with it and it’s been our little mid-morning snack.  It’s like eating a cross between a very yummy pudding and oatmeal; it’s healthy and also very filling. I made up some extra and kept it in the fridge, this way I have access to a healthy snack.  I like eating my pudding with fresh fruit, dried fruits, chopped nuts and seeds.


1 cup chia seeds
2 cups almond milk
½ vanilla bean
A pinch of nutmeg
A pinch of cinnamon
A pinch of cardamom
A pinch of salt
2 tbsp. Maple syrup
Slice the vanilla bean open and scrape out the seeds. Combine everything in a bowl and mix well. Let stand for 15 minutes for the chia seeds to swell and become gelatinous. Top with berries, nuts and seeds.

She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business.
