Both kids were home yesterday all day because Bella has strep again sighL Bella wanted rice so I made rice and vegetables for lunch, which may sound, quit boring but think again because it was delish.
Cheesy Brown Rice Pilaf
1 tbsp. canola oil
1 garlic clove, grated
½ cup grated rutabaga
1 cup broccoli crowns, chopped
A few green or purple beans, tops and ends cut of and then cut in smaller pieces
1 cup brown rice
2 ½ cup water
Salt & pepper to taste
½ cup grated cheese (I used Ste Martaen cashew cheese)
Heat oil on medium heat in a saucepan. Sauté garlic for a minute. Add rutabaga, broccoli, and green beans and cook for 2-3 minutes. Add rice, turmeric, salt and pepper and stir in the water. Cook rice until done, about 30-40 minutes and add more water as it gets too dry. Fluff rice with a fork and add stir in cheese right before. serving.
