Cheese crackers

I made these last night and they are so good and are great with cheese, hummos or pate. They are a bit salty which I like. The trick is to place the dough in the freezer for an hour to make it easier to slice thin crackers.

Cheese crackers
1/2 cup all-purpose flour
1/2 cup spelt flour
1 1/4 cup cheese (I used daiya cheddar cheese)
4 ounces cold butter
2 tsp dried oregano
1/2 tsp baking powder
1/2 tsp baking soda
1 tbs cold water (maybe more of the dough seems dry)
 
Preheat oven 400F
Place everything except the water in a food processor and blend to dough. Add water and blend for another 30 seconds. Make a roll about 1,5 inches thick. Roll into plastic wrap or wax paper and place in freezer for 1 hour. Slice the roll into thin slices. Place on parchment paper on a cookie sheet and bake for 10 minutes. After 5 minutes, flip the crackers and continue to back for remaining 5 minutes. Let crackers cool completely.
