I love all kinds of slaw, specially the creamy ones, unfortunate they don’t like me. We’re trying to eat more root vegetables since a. they are filling, b. they are good for you and c. they are cheap. For lunch today I had kale and bean soup but I craved something tart and crunchy . That inspired this wonderful slaw with flavor of horseradish. I used two vegetables I don’t use that often, celeriac (also known as celery root) and jicama. Unfortunately, I did not get the exact measurements, so tap into your creative side!
1 small piece of celeriac shredded
1 small piece of jicama shredded
Little bit of fresh squeezed lemon juice
salt and dill to taste
Blend blend everything together and let stand for 10 minutes and then….enjoy!!!
