I love this time of the year when the garden is exploding with ripe vegetables and fruits. My tomato plants are producing like never before and on top of that I also received tomatoes from a neighbor who does not know what do with her huge tomato harvest. To preserve all these wonderful vegetables so I have a taste of summer all year long I like canning them. Here is a super easy recipe from Martha Steward I used. I also heard from a Green-Mom co-worker you can also preserve tomatoes by simply placing your super ripe tomatoes individually in the freezer and once they are hard then put them in a freezer bag or container. They will make great sauces later in the year!
