Buckwheat Vegetable Pancakes

These pancakes are my son’s favorite dish. They are perfect finger foods for little ones still leaning to feed themselves. I love them because they are packed with nutrients from the buckwheat, almond milk, spinach and carrots. I’ve also added some pictures of my lunch guest and the receivers of the pancakes, my kids off course.

½ cup buckwheat flour
¼ cup brown rice flour
1 tbsp. cornstarch
1 tsp. baking powder
¾ cups + 2 tbsp. almond milk
1 ripe banana, mashed
1 handful spinach, chopped
1 small carrot, grated
1 tbsp. coconut oil, melted (just place the jar in warm place or water)
Blend everything quickly just to combine and not over work the batter. Cook on a non-stick griddle.

Years of food blogging developed into the cookbook Yummy in My Tummy, Healthy Cooking for the Whole Family. Upon the arrival of her second child, Fredrica founded Green-Mom.com. Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
