Fall is all about warm colors, warm fires and warming food such as braised cabbage and sausages. I found vegan beer brats and I love the combination of salty/spicy with sweet & sour taste of braised cabbage. Bella did not like the sausage but loved loved the cabbage and ate it with quinoa instead.
Heat oil in a pan on medium/low heat. Saute onion for a few seconds. Add cabbage and apples and sauté for 3 minutes. Add balsamic vinegar and cook covered with lid for 20 minutes on low heat. Stir once in awhile. Serve with peppered tofu, brats, seitan or beans.
