Beet and cabbage slaw

I love slaws in any shape and form and for today’s lunch I have a slaw in the fridge blending flavors as I write. I don’t make my slaws creamy but rather use vinegar and oil base. I intend to eat this on the side of a veggie burger.

This salad is so colorful and packed with great nutrients. The Hemp seeds add a nice nutty flavor but also protein and all nine of the essential amino acids. I sprinkle hemp on quit a lot of my foods from salads to smoothies.



1 cup red cabbage, sliced very thin
1 medium golden beet, peeled and grated
1 carrots, peeled and grated
A few green leaves, chopped ( I used beet greens)
1/2 tsp salt
1 tbs Ume plum vinegar
1/2 tsp agave nectar
1 tsp olive oil
1 tbs raw hemp seeds

Combine cabbage, beet, carrot, greens, salt, vinegar and oil and use hands to “massage” the slaw to soften it up and release natural liquids. Blend in agave nectar and hemp seeds. Slaw taste best if it can developer flavors in fridge for 20 minutes before serving.
