BBQ Tofu Neatloaf

Happy Valentine’s day!

Today Bella is feeling better but I’m feeling sick instead. Typical for Valentine’s day right? Well the weather is also behaving strange and it’s been so cold and rainy lately and it does not help that we’re stuck inside all day:( However later this evening me and James are going out for dinner just the two of us so I have something to look forward to.

To make something fun I made BBQ neatloaf that I know is very much appreciated and served it very traditional with  gravy, mashed potatoes and green beans.

Rainy days leaves plenty of time for cuddles

1/2 yellow onion, peeled and diced
1 tsp canola oil
1/2 cup rolled oats
1 package extra firm tofu, crumbled
1 tsp chili pepper
Salt to taste
1/2 cup BBQ sauce + extra to spread on top of the loaf

  • Preheat oven to F400
  • Grease a loaf pan. 
  • Heat canola oil in a frying pan on medium heat and cook onions until glossy but not brown. 
  • Combine onions, rolled oats, tofu, chili pepper, salt and BBQ sauce in a bowl and use fingers to blend well. 
  • Press tofu into loaf pan cook in oven for about 20 minutes. 
  • Spread a layer of BBQ sauce over loaf before serving.

Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
